Thrive Freeze Dried Cranberries are here!

I will share a few Cranberry Recipes from the Thrive Kitchen.


Cranberry Pucker Bars
Yield 12 servings
Ingredients
2 T cornstarch
1 c thrive white sugar
3⁄4 c orange juice
1 c water

Crust:
2 1⁄2 c thrive white flour
1 c thrive white sugar (for crust)
1⁄2 c pecan pieces, chopped fine
1⁄2 c almond slices, chopped fine
1⁄2 c coconut, shredded
1 t baking powder
8 oz cold butter (2 sticks)
1⁄4 t thrive iodized salt
1 t cinnamon
1 t vanilla extract
3 T Thrive Scrambled Egg mix + 5 tbsp. water

Instructions
Mix all filling ingredients together until well blended and allow to set for 10 minutes. 

Combine all crust ingredients except vanilla and eggs in a mixer. Mix well for 1–2 minutes. Stir eggs and vanilla together. Stir into dry ingredients and mix for 1–2 more minutes or until well blended and slightly wet.

Press 2 ½ cups of mixture into a greased 9x13 pan. Pour filling over crust and spread evenly. Sprinkle remaining crust mixture on top of filling. 

Bake at 375⁰F for 30 minutes or until golden brown and bubbly. Allow to fully cool before cutting. 

Serve with whipped cream or ice cream if desired.


Cranberry Sauce
Yield 6 servings
Ingredients
1 c orange juice
1⁄2 c water
1 t orange zest
1⁄4 c thrive white sugar
1⁄2 vanilla bean, scraped
1⁄8 t star anise extract
2 T butter

Instructions
Heat all ingredients except butter in a pan and reduce until syrupy (about 7 minutes). Finish with butter.

Cranberry Cornbread
Yield 12 servings

Ingredients
1⁄4 c thrive white sugar
1⁄4 c orange juice
1 1⁄3 c water
1 can Thrive Golden Cornbread mix (from party pack) OR 

Instructions
Pulse cranberries in a food processor until in pea-sized pieces . Mix with sugar, orange juice, and ⅓ cup water. 

Let sit for 10–15 minutes. 

Add remaining water and cornbread mix and stir until smooth. 

Bake in a greased 9x9 pan at 375⁰F for 25–35 minutes.

Thrive makes my life easier - Cauliflower Tortillas


They look GOOD don't they?  

Many people are cutting back on carbs or going Paleo and these work great for them.  My husband couldn't care about carb counting, doesn't have a clue what Paleo would be.  He just knows he LOVES these as much as I do. He was eating my test batches before they had a chance to cool enough.

I did a blog posting for my dear friend Misty over at YourOwnHomeStore  where I show how to make these. Today I was asked for the recipe and it reminded me I still had some left over in the freezer. 

Tonight will be a very busy night for us so I needed a quick dinner. That is always very do-able with Thrive. Hummm I have Thrive Chili Express





I make up the Chili and made this stacked dish that could stay warm in the oven until family could have a chance to eat when time allowed for them.


This is how they turned out. I'm over the top happy how good they taste. Only problem is we are now out of tortillas!


These tasted even better than they look! I will be making them again and again.

Chicken Tostadas

Serves 12
IngredientsInstructions
Tostada Filling:
3c. THRIVE™ Seasoned Chicken Slices (FD)
1c. THRIVE™ Green Bell Peppers (FD)
1c. THRIVE™ Red Bell Peppers (FD)
1c. onion slices (1 inch long)
1tbsp. garlic, minced
½tsp. chili powder
½tsp. cumin
1tsp. THRIVE™ Chef's Choice Seasoning Blend
1tbsp. Cholula hot sauce
1tbsp. THRIVE™ Cilantro (FD)
12tostada shells

Refried Beans:
2c. THRIVE™ Instant Pinto Beans
¼c. THRIVE™ Chopped Onions (FD)
½tbsp. THRIVE™ Chef's Choice Seasoning Blend
½tbsp. THRIVE™ Peppercorn Seasoning Blend
1tsp. THRIVE™ Chicken Bouillon
3c. water
1tbsp. lime juice

Cilantro Cream:
1c. THRIVE™ Sour Cream, reconstituted
½c. sour cream, fresh
¼c. THRIVE™ Cilantro (FD)
2tbsp. THRIVE™ Chopped Spinach (FD)
tbsp. THRIVE™ Chef's Choice Seasoning Blend
¼tbsp. THRIVE™ Peppercorn Seasoning Blend
½tsp. chili powder
½tsp. cumin
½tsp. THRIVE™ Iodized Salt
1tbsp. Cholula hot sauce
In a medium size saucepan combine all ingredients for beans except lime juice and cook until liquid is mostly gone. Puree with hand blender or food processor until desired texture. Add lime juice before serving. In a blender, blend all the cilantro cream ingredients until smooth. Best if refrigerated 1 hour before serving.
Reconstitute chicken and peppers by placing in a small bowl and barely covering with cool water. Allow to stand 5 minutes (no need to drain). In a skillet on high heat, sauté onions and garlic. Add chicken mixture and sauté together. Season with remaining ingredients.
Spread refried beans on each tostada shell, add chicken mixture, then top with cilantro cream. Add other toppings as desired, like THRIVE cheese, shredded lettuce, guacamole, and THRIVE salsa.
