I knew if I succumbed to the drive-thru temptation I would not only regret it tomorrow when I pulled on my jeans, I would regret it later that evening when my tummy ask "WHAT did you give me???"
Since I have a Home Store I knew I had everything on hand, I just didn't want to care about making anything pretty or complicated.
We do have breakfast for dinner on occasion and I figured that was a good as any idea that was popping into my head.
So, a skillet full of veggies is always a good place to start. I keep mason jars of on my counter to make it very easy for all to see and use what we have. I just chose a variety of veggies that sounded go to me at that moment.
Here I have all Thrive Freeze Dried Veggies, Red Bell Peppers, Zucchini, Asparagus, Chopped Onions, Green Onions, & Green Chili Peppers. I'm pretty sure that's it. I put them in in a hot pan with about
1/4 cup or so of water to let them plump up while I mixed up my Scrambled Egg Mix (which is AWESOME!) drizzled a bit of Extra Virgin Olive Oil over my veggies for my "good fat", stirred and poured in my eggs.
How good does this look? It took me less than one minute to select all my veggies, less than one minute to mix up my scrambled eggs and dinner was cooking!
Here I have finished cooking and topped with a sprinkle of our Freeze Dried Parsley.
On my plate, dinner in 5 minutes. I don't care if you call me crazy I love salsa on my eggs!
Now, I'm sure my good friend Misty will give me grief for not supplying a "recipe" with precise measurements and such .. but really? Do you really need that to make eggs and veggies? Doesn't matter, I'm too tired to give them to you! Fend for yourself!
