Chicken Fricassee

Prep time: 35 min
Serves 4
IngredientsInstructions
4chicken thighs
4chicken drumsticks
1tbsp. olive oil
1tbsp. garlic
½c. white wine
¼c. THRIVE™ Chopped Onions (FD)
1qt. water
½tbsp. THRIVE™ Chicken Bouillon
½c. THRIVE Velouté sauce, dry
1c. heavy cream
1tbsp. THRIVE™ Chef's Choice Seasoning Blend
½tbsp. THRIVE™ Parsley (FD)
½tbsp. THRIVE™ Chives (FD)
½tbsp. Cholula hot sauce
½tbsp. lemon juice
2tbsp. butter
Season chicken with additional Chef’s Choice blend and allow to sit for 20–30 minutes. Make sure each piece is coated evenly.
Heat oil in a skillet and add chicken; brown on all sides until lightly caramelized. Remove chicken. Add garlic to pan, sweat until light brown, and add white wine and onions. Reduce by half, then add water and chicken bouillon.
Return chicken to pan and cook covered for about 12 minutes. Uncover and cook until about 2 ½ cups liquid remains. Add sauce, stirring chicken to coat evenly. Allow to simmer for about 3 minutes, then fold in cream and simmer another 2–3 minute or until sauce is desired thickness.
Remove chicken and strain sauce through a strainer. Add remaining ingredients and stir well to incorporate. Serve sauce over chicken.

Soups, Stews, Casseroles ... oh and Ice Cream!

The fall and winter are wonderful time for nice warm hearty stews, rich flavorful soups and oh so delicious casseroles.

There is just one drawback to that and that's all the prep work that goes into making them!

I use to walk into Panda Express and say MAN how I wish someone would do all that prep work for me and load up my refrigerator like that!



But then I also knew even if some how that magically happened for me I would never use up everything before things got slimy and ended up in the trash.  I also know that once produce is peeled and cut they loses their nutrients a lot faster. Grrr

But that was before I found Thrive. Now I have Thrive as my sous-chef! I have all my veggies washed, chopped peeled and waiting for me.  My meats are cooked and the fat has been disposed of. Fruits are ready and waiting. Onion, no more tears. OK OK, you already know all of this. So let me tell you how easy it is when you have Thrive as your own personal sous-chef.

I decided I wanted to make stuffed peppers. I usually go out and buy red, orange and green bell peppers to make a pretty dish. I just did not feel like leaving the house. I also didn't feel like making a mess in my kitchen.  I usually clean, cut and par-boil my peppers as I like mine on the softer side. Then there is the browning of the meat which means there is grease to drain and dispose of. Rice needs to be cooked.  That is three pans right there. Yuck!

We've been cooking more and more with our Thrive and it has saved us so much time. I can honestly say it has saved us a great deal of money over the months we have been keeping track. I knew we were saving money I just didn't realize how much until I decided to really track it. I was very pleasantly surprised. I'm sure a lot of you were like I was in the beginning.  You look at the price of a #10 can and say hummmmm that sounds like a lot! I know it's good for 25 years but I don't see how that's going to end up saving me money. I've started using and comparing and even without taking into consideration the money that gets thrown away with food that spoils before I get to use it or is too long on the shelf or in the freezer I am STILL saving money. 

Starting in January I will be teaching Thrive Cooking Classes and I will be giving the cost breakdown of the dishes I make and compare, as best I can, to local costs.  That will make it easier for everyone to wrap their brain around how this does save time AND money for your own food budgets.  If you are interested in a Cooking Class just let me know.

Back to my UnStuffed Peppers ...

I decided to "cook" once and eat four times. Only this time that meant making two Jar Meals, one Soup and one Casserole. 

Both the soup version and the casserole version were excellent! Add more water and make it a soup or less water to use as a casserole. Brilliant, if I do say so myself. Now my guys can just grab a jar and THEY can make dinner one night. 


I added garlic to mine, you can use fresh, powdered or granulated if you like.  This will fill one 1/2 gallon jar. I cut the recipe in 1/2 to fill the quart sized jar. 

To make soup you add 10 cups of water bring up to a boil and simmer for 15 minutes.  For the casserole you add only 6 cups of water, let everything rest and rehydrate for about 10-15 minutes before placing in a 350 degree oven for 20-25 minutes.  I topped mine with 2 cups shredded white cheddar but you can use what ever you like.

Thrive Freeze Dried Cranberries are here!

I will share a few Cranberry Recipes from the Thrive Kitchen.


Cranberry Pucker Bars
Yield 12 servings
Ingredients
2 T cornstarch
1 c thrive white sugar
3⁄4 c orange juice
1 c water

Crust:
2 1⁄2 c thrive white flour
1 c thrive white sugar (for crust)
1⁄2 c pecan pieces, chopped fine
1⁄2 c almond slices, chopped fine
1⁄2 c coconut, shredded
1 t baking powder
8 oz cold butter (2 sticks)
1⁄4 t thrive iodized salt
1 t cinnamon
1 t vanilla extract
3 T Thrive Scrambled Egg mix + 5 tbsp. water

Instructions
Mix all filling ingredients together until well blended and allow to set for 10 minutes. 

Combine all crust ingredients except vanilla and eggs in a mixer. Mix well for 1–2 minutes. Stir eggs and vanilla together. Stir into dry ingredients and mix for 1–2 more minutes or until well blended and slightly wet.

Press 2 ½ cups of mixture into a greased 9x13 pan. Pour filling over crust and spread evenly. Sprinkle remaining crust mixture on top of filling. 

Bake at 375⁰F for 30 minutes or until golden brown and bubbly. Allow to fully cool before cutting. 

Serve with whipped cream or ice cream if desired.


Cranberry Sauce
Yield 6 servings
Ingredients
1 c orange juice
1⁄2 c water
1 t orange zest
1⁄4 c thrive white sugar
1⁄2 vanilla bean, scraped
1⁄8 t star anise extract
2 T butter

Instructions
Heat all ingredients except butter in a pan and reduce until syrupy (about 7 minutes). Finish with butter.

Cranberry Cornbread
Yield 12 servings

Ingredients
1⁄4 c thrive white sugar
1⁄4 c orange juice
1 1⁄3 c water
1 can Thrive Golden Cornbread mix (from party pack) OR 

Instructions
Pulse cranberries in a food processor until in pea-sized pieces . Mix with sugar, orange juice, and ⅓ cup water. 

Let sit for 10–15 minutes. 

Add remaining water and cornbread mix and stir until smooth. 

Bake in a greased 9x9 pan at 375⁰F for 25–35 minutes.

Thrive makes my life easier - Cauliflower Tortillas


They look GOOD don't they?  

Many people are cutting back on carbs or going Paleo and these work great for them.  My husband couldn't care about carb counting, doesn't have a clue what Paleo would be.  He just knows he LOVES these as much as I do. He was eating my test batches before they had a chance to cool enough.

I did a blog posting for my dear friend Misty over at YourOwnHomeStore  where I show how to make these. Today I was asked for the recipe and it reminded me I still had some left over in the freezer. 

Tonight will be a very busy night for us so I needed a quick dinner. That is always very do-able with Thrive. Hummm I have Thrive Chili Express





I make up the Chili and made this stacked dish that could stay warm in the oven until family could have a chance to eat when time allowed for them.


This is how they turned out. I'm over the top happy how good they taste. Only problem is we are now out of tortillas!


These tasted even better than they look! I will be making them again and again.

Chicken Tostadas

Serves 12
IngredientsInstructions
Tostada Filling:
3c. THRIVE™ Seasoned Chicken Slices (FD)
1c. THRIVE™ Green Bell Peppers (FD)
1c. THRIVE™ Red Bell Peppers (FD)
1c. onion slices (1 inch long)
1tbsp. garlic, minced
½tsp. chili powder
½tsp. cumin
1tsp. THRIVE™ Chef's Choice Seasoning Blend
1tbsp. Cholula hot sauce
1tbsp. THRIVE™ Cilantro (FD)
12tostada shells

Refried Beans:
2c. THRIVE™ Instant Pinto Beans
¼c. THRIVE™ Chopped Onions (FD)
½tbsp. THRIVE™ Chef's Choice Seasoning Blend
½tbsp. THRIVE™ Peppercorn Seasoning Blend
1tsp. THRIVE™ Chicken Bouillon
3c. water
1tbsp. lime juice

Cilantro Cream:
1c. THRIVE™ Sour Cream, reconstituted
½c. sour cream, fresh
¼c. THRIVE™ Cilantro (FD)
2tbsp. THRIVE™ Chopped Spinach (FD)
tbsp. THRIVE™ Chef's Choice Seasoning Blend
¼tbsp. THRIVE™ Peppercorn Seasoning Blend
½tsp. chili powder
½tsp. cumin
½tsp. THRIVE™ Iodized Salt
1tbsp. Cholula hot sauce
In a medium size saucepan combine all ingredients for beans except lime juice and cook until liquid is mostly gone. Puree with hand blender or food processor until desired texture. Add lime juice before serving. In a blender, blend all the cilantro cream ingredients until smooth. Best if refrigerated 1 hour before serving.
Reconstitute chicken and peppers by placing in a small bowl and barely covering with cool water. Allow to stand 5 minutes (no need to drain). In a skillet on high heat, sauté onions and garlic. Add chicken mixture and sauté together. Season with remaining ingredients.
Spread refried beans on each tostada shell, add chicken mixture, then top with cilantro cream. Add other toppings as desired, like THRIVE cheese, shredded lettuce, guacamole, and THRIVE salsa.

Meat and Two Veg

My hubby is from England and that is a term they use for their meals.  This, of course, means a meat serving and two sides of vegetables.  Often potatoes and something else.

Well, for me this is going to mean my Lean and Green meal.  We have been working very hard at getting back into shape and reduce our waist! And for me, a bit lower as well!

A while back I purchased some Lékué cookware items and I LOVE them!

Last night it was just me at home for dinner. One of the many things I love about Thrive is that is it just as easy to cook for 10 as it is for one person. Last night was just one more example of how to eat right and quickly when it's just you.  I started with my veggies, just whatever sounded good right then. Here I have decided to use broccoli, green beans, onions, celery and red bell peppers.

You could you any variety you like.  I keep some of my most used items out on the counter at all times. It just makes things that much more convenient.

I seasoned with salt, pepper and 1/2 teaspoon of our new, but seasonal, classic lemonade. This is a lemonade mix that you add your own sweetener to, therefore it can be used in a variety of ways!


I placed the serving of salmon on the steam tray, which is over the veggies.  Seasoned with our chef's choice seasoning blend and 1/2 teaspoon our our classic lemonade
You can see the veggies on the bottom. Since I'm using freeze dried veggies I added hot water for my liquid. My husband is English so we always have the electric kettle with hot water in seconds. For this amount of veggies I used 3/4 cup of hot water and cooked in the microwave. This brand of cookware is great in the microwave, oven or sun oven.  I wanted dinner fast! Microwaving for 3 1/2 minutes for this size serving of Salmon is what was required. I let it rest with the cover closed for 1 minute more and AHHHHH!
Perfectly done salmon, and perfectly done veggies.  One piece of cookware. NO washing, chopping, peeling of vegetables. No bagging and storing of pieces of veggies not yet used hoping I do use them in the next day or so.  Just quick, easy, tasty and nutritious food!
I know the lighting was not very good for these pictures, but you do what you can with what you've got at the time.

My point is ....
It is wonderful to live in a time were we do have freeze dried foods available to all of us! I work two jobs. I may have to cook for one or for 8, who knows! I wish my grandmother had this available to her when she was alive and living on her own and did not eat right as it was just too difficult to bother. This would have made her life so much easier and healthier. When my son goes off to college he will have decent food on hand to eat well when he's not off getting pizza!

I just know that I feel so much better knowing we are eating quality foods AND that I have 
MY own Home Store to depend on no matter what happens.

Sun Oven Sunday Dinner

I absolutely LOVE my Sun Oven, so much so that I now have two! The new All American Sun Oven came out and it is bigger and better and I had to have one. I waited patiently until we had them at Thrive Life, OK not so patiently, but I have mine now.

We have been eating nice and light around here for quite some time now.  Saturday we used the Sun Oven to make Citrus Chicken. It's hot and sunny here so it didn't take very long to cook my boneless citrus marinated chicken breasts and thighs. They turned out very nice, plump and juicy.

But there are times that I miss the big Sunday dinners I use to make. This Sunday I found myself craving roasted vegetables and pot roast. I also did not want to heat up my kitchen. So I made it as easy on myself as I could. 

These ....












Turned into these, roasted and not dried out.

Since I was using a pan that would reflect the heat I covered the lid with a dark kitchen towel. Worked great!










When all was done I just let my meat rest while I reduced the juices and thicken slightly to make a very nice tasty sauce.

Now for dessert.  We really needed something light after this meal. I found a recipe on Pinterest that really intrigued me. It was just a box of Angel Food cake mix and a can of crushed pineapple. That's it! You stir the two together and bake in a 9x13 pan and it was very nice. I just wanted a little more flavor to it. It made me think of the ambrosia pudding I use to make. So I added some of those flavors. 

I don't have any canned pineapple so I used my Thrive Pineapple Chunks that I reconstituted with water then blitzed in the blender to "crush". I added drained mandarin oranges and coconut.
Stirred gently and poured into a parchment lined pan.
After it baked in the Sun Oven I created a glaze using the mandarin orange juice and powdered sugar. Drizzed glaze on top of the cake and sprinkled some extra coconut.

Tasted even better than it looks!
