Mu Shu Beef and Vegetable Stir Fry by Chef Todd Leonard, CEC Prep time: 25 minutes Serves 4 Ingredients Instructions 1 c. THRIVE™ Beef Dices (FD) ¼ c. THRIVE™ Green Peas (FD) 1 c. THRIVE™ Mushroom Pieces (FD) ½ c. THRIVE™ Green Beans (FD) ½ c. THRIVE™ Zucchini (FD) 2 tbsp. THRIVE™ Chopped Onions ¼ c. THRIVE™ Celery (FD) ¼ c. THRIVE™ Carrot Dices(FD) ¼ c. THRIVE™ Green Chili Peppers (FD) ¼ c. THRIVE™ Tomato Dices (FD) ¼ c. THRIVE™ Green Bell Peppers (FD) 1 tbsp. sesame oil 1 tbsp. olive oil ¼ c. THRIVE™ Scrambled Egg Mix powder + ½ c. water 3 tbsp. soy sauce 2 tbsp. cilantro, chopped fresh 1 tbsp. garlic, fresh minced 1½ tbsp. rice vinegar 1 tsp. season salt ¾ tbsp. THRIVE™ Beef Bouillon + 1 c. water In a large bowl, mix beef and all vegetables with enough warm water to cover them. Allow to reconstitute for 10 minutes and drain excess water. In a preheated wok or skillet, add 1/4 tbsp. of each sesame and olive oil. Add the scrambled egg mixture and fry, then remove from pan and set aside. Heat remaining oil in pan and sauté beef and vegetables with garlic until slightly browned. Add the egg back in and stir well. Add seasonings and stir to blend well. Add the beef broth and allow to reduce by half before serving.
