Comfort Food Cooking with THRIVE

Sometimes I feel myself being drawn to foods from my childhood, comfort foods. I remember buying myself the Kraft Tangy Italian Spaghetti box mix and a small can of tomato paste. Of course back then it wasn't call Kraft  Spaghetti "Classics", it was just cheap! But it was comfort food all the same. This "Classic" is no longer found in the regular grocery stores but I was able to find them on Amazon.  I was excited!

I was excited until they arrive and I actually cooked one for myself.  Sometimes happy childhood memories should just stay memories, not meant to be relived.

I do not have cravings just for "boxed foods" from my youth, I have craving for things we grew as well.  I lived in the mid-west and when we grew things they GREW!  We often had a lot of zucchini.  The problem was not that there was a lot of zucchini, it was each zucchini was a lot!

Even though we found very inventive ways to use our zucchini, it got to be that you started wishing for zucchini season to end, as zucchini found it's way into many many dishes. Not all of them enjoyable!

Driving outside of town in a rural area I spotted a bumper sticker and it read;
 "It's Zucchini Season - keep your windows rolled up!"

Still I find myself wanting Chocolate Zucchini Cake, Zucchini Fritters and a dish we never bothered giving a name to.  We would make it with either ground beef or chicken.  Today I decided to recreate my zucchini comfort dish using THRIVE.

Chicken Slices - Zucchini - Tomato Powder Base - Red Bell Peppers - Green Chili

 Chicken Zucchini Bowl for One

1/4 Cup  Thrive Tomato Powder
2    Cups Water
1/2 Cup   Thrive FD Chicken Slices
1/2 Cup   Thrive FD Zucchini
1/4 Cup   Thrive FD Red Bell Pepper
1/4 Cup   Thrive FD Green Chili
1              Garlic clove, minced (if desired)
1/2 Cup   Thrive FD Mozzarella Cheese

Blend the Tomato Powder into the water.  Add all the other ingredients.  All those ingredients that you did not have to wash, peel, chopped and package up the leftovers!  Simmer for 8-10 minutes and you will have a nice warm dish of good tasting, healthy comfort food.

I used Frozen Garlic Cube - FD Mozzarella - no need to hydrate first - serve with a nice slice of sourdough bread

One of the many things I LOVE about THRIVE is that you can cook just a easily for 1 as you can for 21.
