Since we love pancakes and I love kitchen gadgets it was Aebleskiver night. These can be sweet or savory. Using Thrive 6 Grain Pancake Mix makes it even better. The 6 grains consists of red wheat flakes, white wheat flakes, barley flakes, rye flakes, rolled oats, sunflower seeds. This is not your typical thick hard to eat "just because it's good for you" grain pancake mix, this is actually very good. Vary reasonable priced as well!
I use this mix and add whipped egg whites to give it some more lightness when I'm doing a sweet version, and I don't bother if it is a savory filling. The egg whites are not necessary. Do what you like best.
3 Cups Thrive 6 Grain Pancake Mix
2 1/2 Cups Water
1 T Baking Powder (I learned this from Misty Marsh)
2 Egg Whites, whipped to soft peak stage
Blend the Mix and Baking Powder, then add the water mixing very well with a whisk or fork. Leave the batter to sit for 10 min while you whip the egg whites and organize whatever you would like to use for fillings.
After batter has rested carefully fold in the egg whites.
Then drop in a small amount of filling, usually about a teaspoon full.
Thrive Ham Dices (hydrated) & Thrive Cheddar Cheese (hydrated). Noooo not all at the same time! You can use what ever your heart desires and you don't mind eating in the middle of a pancake puff.
Once they are done they can are ready to eat or you can dust them with powdered sugar, drizzle with syrup (maple, caramel, chocolate) or ??? Use your own creativity and enjoy!
